Miracle Noodles



Heard about the Miracle Noodles from one of the Dukan bloggers. Started reading about it and let me tell you this, i thought this was too-good-to-be-true! But I was wrong. I tried it and it is as real as it gets.

Turns out that the “miracle noodle”, aka Shirataki, has been around in Asia for quite some time. What exactly are shirataki noodles? They are made from the tubers of an Asian plant called a konjac plant. The tubers are dried and ground to make flour which is then used to make noodles. In addition to having almost no calories or usable carbohydrates, shirataki noodles contain a type of soluble fiber called glucomannan. This fiber swells up and is believed to promote a sense of fullness and keep food in the stomach longer (good for blood sugar & thus diabetics).

The Miracle Noodle brand has no added tofu, which the other brands add to give the noodle more opacity and pasta-like texture.

I am a carb junkie. I can't go without carbs throughout the day. Whether it's bread, pasta or rice. I love it! But I needed to lose weight. I needed healthier life style and I have started aiming towards that. That's why when I heard about these noodles that have ZERO Calories, Zero everything, I just had to try it out. 

I went ahead and ordered a 20 pack of the angel hair Miracle Noodle. Don’t expect an exact pasta clone. It’s not. But (once rinsed!) the shirataki noodles play the stand-in role really well. They have no taste to themselves and will absorb the taste of whatever they are mixed with.

They are slightly rubbery but to me, that just adds to the fun of the texture. One 7 oz package makes for a very filling portion, most likely because of the “swelling” factor described above. The noodles can be prepared in soo many ways. Whether it's Asian cuisine, Italian or even a salad, the possibilities are endless.

The noodles are packaged in a liquid that has a fishy odor. The odor is removed with 1 to 2 minutes of thorough rinsing. The odor is really the only drawback and you don't really feel/smell it after the 1 to 2 minutes of rinsing.

    I just started the Dukan Diet a few days ago, and am VERY intrigued by your post about Miracle Noodles. :) Could you tell me where you ordered them from? Also, are they okay to eat during the Attack phase, or should I wait until I'm in the Cruise or Consolidation phase?

  2. Hi Vicki, happy to know you're following my blog & that you're doing Dukan!! I'll be following up on your blog for sure and we can share our thoughts about it :)
    Miracle noodles are awesome. I tried them and they are really good. I'm thinking we can have it on Dukan because it contains NOTHING that you can't have. It's bacially mostly water! I'll post the ingredients later today on my blog to give you an idea about it.

  4. That's great! I got the fettuccine. I actually like them better than the others. They have more substance. I hope you enjoy them. Don't let the smell get to you when you open it. Just follow the instructions on the package :)
